As always in the battle between chemical and natural, it is usually the natural than wins the war, even though the chemical wins quite a few battles along the way. In other words, there are new natural components called bacterocins which can act in the same way as Sulphur dioxide. If and when these are totally understood and proved to the efficient, then sulphur dioxide will be aliminated from the process to have a 100 per cent organic wine!
