They will also be able to make recommendations as to the type of wine that you should try to make for your first winemaking efforts. These people will also be able to discuss the benefits of making use of sugar over wine conditioners.     I tried making prosecco but that end result was flat vs bubbly. What are the most likely causes for the failure and how can I prevent them? A few relevant points: I bought the yeast for sparkling wine from a web site. I used a soda pop capper and new wine bottles (750ml). I used a light shot of Pam aroung the inside of the bottle cap to imnprove the seal. The base wine was pinot groggio. The prosecco har quite a bit of sediment material in the bottom of the bottle.

    I’ve never considered boosting the alcohol in old wine, but in theory you could add vodka or another spirit, though this would change the wine’s taste.

    Don, a possibility with your flat vs. bubbly could be that the fermentation really didn’t take off as preferred. There’s actually yeast boosters you can experiment with, as well as adding additional sugar during initial fermentation.
