about the “good” smell: Do you need an out-of-the-way place like a storage closet or do you think a spare bedroom might saturate the room? making it hard to remove when you’re done?

I love that fruity smell, with a tad bit of yeast.
How many gallons in the primaries? Five?

  • Wineworks

Yes it does need to be clear before siphoning off.
Probabley you hadnt degassed it enough or there was a slight fermentation taking place before you added the finings.
Leave it for a few more days preferabley in a cool place until it clears.
